I learned from Samia that it’s really about the ingredients and she suggested the Mae Ploy Brand Curry Paste. The paste, limes leaves and coconut just create this beautiful sauce that has just enough spice to really give you a punch! I’m looking forward to making a fish and yam curry next.

Amy’s First Curry
I tried Samia’s Green Curry tonight and Paul said that I was a good student! I haven’t posted my Thai I cooking class yet, but what a class it was! I couldn’t wait to fix the Curry for Paul. He loves Curries and I really didn’t feel like I knew enough to make one. So, tonight was Chicken & Thai Aubergine Green Curry.

We make this one all the time...they sell the little round eggplants at Lee Lee's.. If I'd known you guys would do spicy...I would have made it for you last time!
